New Year’s Eve with select wines of the Dveri–Pax wine cellar

For most of us New Year's Eve is a special experience. This certainly includes dinner, when a select wine is an indispensable part. Different people have different tastes, which is why we cannot mention any special dish which should not be missing from the holiday table. The more varied the menu, the more interesting and full of interesting flavours the evening can be.
When selecting wines, we have to be very careful, as the principle stands that wines must be "consistent" with the dishes served, in the sense that the flavour, aroma and bouquet should not "drown out" the taste of the food, but bring it out. A true host must know that the same rule also applies vice versa. A dinner consisting of several courses, the tastes of which are complemented by the tastes of wines can be a true experience. For this reason, there is nothing wrong with consulting an expert when choosing the correct wine; success is then guaranteed.

We recommend the following selection of wines, which will allow you to delight your guests and achieve the fullness of flavours of your dinner  surrounded by those closest to you.

For light starters of fish, white meat and vegetable specialties, we recommend the superior wine Benedict cuvee 2007, which is a light, fruity, fresh blend of Pinot Gris, Furmint and Chardonnay. Due to its full and rich flavour, the Pinot Gris 2007, which is a nicely rounded, rich wine with a typical bouquet, can be served with lighter meat dishes, risottos and pasta.

RIESLING 2007 comes next. This is a complex, full wine with a delicate fruity taste and a typical aroma, reminiscent of the scent of fresh peaches. This wine is a wonderful companion to seafood dishes; it can also be served with roast lamb or kid.
We recommend SAUVIGNON 2006 to go with stronger meat dishes, ragouts and smoked fish. This rich, mature wine presents a unique blend of strength and refinement. Its characteristics derive from 18 months of maturation in oak barrels.

If you are serving dry meat specialties, ripe cheeses or grilled dishes, you must not forget the BENEDICT RED 2007. This is an interesting combination of Pinot Noir, Blaufränkisch and Zweigelt. This wine will surely satisfy you with its smoothness, fruitiness and full, rich taste.

If you are serving your guests game, steaks and dark sauces, do not forget the BLAUFRÄNKISCH 2006, which offers the features of a rich, mature and complex wine through 18 months of ageing in oak barrels. The richness of its flavour is nicely complemented by its exceptional red–violet colour and typical bouquet.

At the very end, we recommend you treat your guests to our sweet predicate wines, which will be an excellent New year's dessert with their full flavour and sweetness.

Regarding the recommended intake of wine on such occasions, we, at Dveri-Pax, are in favour of the principle that less is more. Quantities should be moderate, so that the minds are clear and memories of the evening are not forgotten.
