Gregor Šagi, Dveri- Pax castle kitchen chef enyojes the preparation of food and loves to add a piece of nature from  the Dveri- Pax castle garden, where we grow vegetables and different herbs.  This time he has prepared an amazing plate consisting of a candied zander in brown butter with lemon grass on buckwheat spaghetti with onion essence and foam made from smoked bacon.


With this amazing harmony of flavors most definitelly comolements perfectly a glass of amazing wine, picked by the general manager and main enologist of our cellar Danilo, Flakus.

 

This is a 2012 Fermint. Its color is a medium deep golden yellow. The nose is discrete and reminds us of lemons, white flowers, wet rocks, a touch of vanilla, mineral, delicatelly intertwined.  The mouthfeel of the wine is dry, acidic, medium body and full intense flavor, joining the flavors are also notes of wood.

 

We could characterize it as a calm soul but could also mistake it for a firstclass chablis.

 

Its goodbye is long. Let the harmony of all these amazing flavors last long ...
